Ripe cherries are hand-picked and pre-dried on raised tables near the farm before being transferred for controlled drying in dark rooms. The slow process, lasting 22 to 26 days, reduces moisture to about 10.5%, preserving acidity and enhancing fruit and floral complexity. Using the natural method, the pulp remains on the seeds, developing rich fruit notes and pronounced sweetness. Finca La Mula’s natural coffees display aromas of black currant, passion fruit, cacao, and jasmine, with flavors of dried papaya, tea rose, and jasmine caramel.
