A classic natural process for Chicho Gallo coffee begins with the harvesting of cherries at peak ripeness. The cherries are then placed on African raised drying beds for approximately 16 days, allowing for slow, even drying and the development of fruit-forward sweetness.
After this phase, they are transferred to a controlled drying room to ensure optimal homogenization of the lot, stabilizing moisture and enhancing consistency in both flavor and quality.
